We roast in small lots and ship within two days, so the cup you brew tastes like the morning it was made.
Most mornings start before the light does. We roast in batches small enough to taste every one, adjusting by a few degrees and a few seconds until the coffee says what it is meant to say.
Nothing sits on a shelf. Nothing gets rushed. We buy from a short list of growers we know by name, in quantities we can actually drink down, and we put a roast date on every bag because freshness is the whole point.
Good coffee is mostly patience, and we have made our peace with that.

In the roastery
Every lot gets profiled by hand on a small drum roaster. We chase a first crack we can hear across the room, then ease back and let the sugars settle. The numbers below describe how we like to work, not a quota to hit.

No special gear required. Just a little attention and a minute to spare.
We like one part coffee to sixteen parts water. A kitchen scale beats a scoop.
Grind right when you are ready to brew. Coffee goes flat fast once it is open to the air.
Wet the grounds, wait, then pour in small circles. Steady beats fast every time.
Let it cool a minute. Then drink it like you mean it. That is the whole ritual.
